Warming Veggie Chili with Nutritional Yeast

Veggie chili is one of the simplest and most nourishing recipes—perfect for a "chilly" winter evening. It really is a big hug in a bowl!

The already delicious flavor of this dish is enhanced by the addition of Sari Foods Non-Fortified Nutritional Yeast, which provides a source of both protein (a complete, bioavailable, and vegan source) and fiber and contains all 18 amino acids and a multitude of different minerals, including iron, selenium, and zinc. Ingredients:

Serves 6

  • 2 onions
  • 2 carrots
  • 1 green pepper
  • 2 sticks celery
  • 1 1/3 cup sweet potato
  • 2/3 cup butternut squash
  • 2 garlic cloves
  • 1 Tbsp olive oil
  • 1 tsp cumin
  • 1 tsp hot chilli powder
  • 1 tsp cinnamon
  • 2 cans mixed beans
  • 2 cans chopped tomatoes
  • 3 Tbsp Sari Foods Non-Fortified Nutritional Yeast 
  • 1 large handful of coriander
  • 3 avocados
  • Tortilla chips

Directions:

Finely chop all your vegetables.

Heat the oil in a large pan and add the chopped vegetables. Cook for about 10 minutes, stirring regularly, until the veggies start to soften. Add the spices and some seasoning and cook for a further minute to allow their flavors to release.

Next, add the mixed beans and chopped tomatoes, stirring to combine. Partially cover the pan and allow to simmer for 30 minutes, until all the vegetables are tender. Loosen with a splash of water if needed and stir in the nutritional yeast.

Dish into warm bowls, top with coriander and avocado, and serve with tortilla chips. It's as simple as that—enjoy!
